Fish Chowder (dairy free)

I wanted to do a different fish dish for Shabbat dinner, so after much thought, I decided to do a fish chowder (without dairy). I adapted a recipe I found in Epicurious and it had amazing reviews from the guests 🙂

This is what I used

2 tablespoons Earth Balance buttery spread

1 medium onion , finely diced

6 to 8 sprigs fresh thyme, leaves removed

2 dried bay leaves

2 pounds potatoes, peeled and cubed

4 cups water, plus 2 chicken consommé cubes

Sea salt and freshly ground black pepper to taste

3 pounds skinless sea bass fillets, cut in chunks

2 cups coconut milk

1 can creamed corn

Heat a heavy pot over low heat and add the butter, onions, thyme, and bay leaves to the pot and sauté, stirring occasionally with a wooden spoon, for about 8 minutes, until the onions and softened but not browned.

Add the potatoes, water and consommé cubes, crumbled. If the stock doesn’t cover the potatoes, add just enough water to cover them. Turn up the heat and bring to a boil, cover, and cook the potatoes vigorously for about 10 minutes, until they are soft on the outside but still firm in the center. Reduce the heat to low and season with salt and pepper to taste. Add the fish fillets, creamed corn and coconut milk and cook over low heat for 10 minutes, or until potatoes are tender.

Queria hacer una receta de pescado diferente para la cena de Shabbat, y despues de meterle mucha cabeza decidi hacer un chowder de pescado (sin leche). Adapte una receta que encontre en Epicurious y le gusto muchisimo a la gente 🙂

Esto es lo que use:

2 cucharadas de Earth Balance buttery spread

1 cebolla mediana , picadita

6 a 8 ramitas de tomillo fresco, sin el tallito

2 hojas de laurel

2 libras de papas peladas y cortadas en cubitos

4 tazas de agua, mas dos cubitos de sabor a pollo

sal y pimienta negra molida al gusto

3 libras de filete de corvina de corte grueso. en cubitos

2 tazas de leche de coco

1 lata de maíz en crema

Calienta una olla grande y agrega el earth balance, la cebolla, tomillo y hojas de laurel y saltealas revolviendo ocasionalmente con una cuchara de madera por unos 8 minutos, hasta que la cebolla este suave.

Agrega las papas, el agua y los cubitos de consomme triturados. Si el liquido no cubre las papas, hecha un poquito mas de agua. Deja que hierva, baja el fuego y tapa la olla por unos 10 minutos. Despues de 10 minutos  agrega sal y pimienta al gusto. Agrega el pescado, el maiz en lata y la leche de coco y cocina por 10 minutos mas con la olla tapada, hasta que las papas están suavecitas.
