Leek Meatballs by Sol – Albondigas de Puerro de Sol

I got this recipe from my friend’s Hannah’s mom, Sol. She’s a big league cook…so I was really excited to try this recipe out. Specially since she has such a different spice range….these meatballs are just delicious

1 lb of ground meat

1 ½ lb of leek

1/8 tsp pepper

¼ tsp ground nutmeg

¼ tsp allspice

1 ½ cubes of chicken buillon

1 egg yolk, beaten

1 whole egg, beaten

flour

oil for frying

For the sauce

¼ cup of oil

½ can of tomato paste (small)

1 cube of chicken buillon

½ cup of water

juice of 1 lemon

pepper

Cut the white part of the leek, wash it and cook for 20 minutes. Drain and let cool down. Squeeze them to take all the water out. Put it in the food processor and grind.

Mix the leeks with the ground meat, add the spices, the smashed chicken buillon cube, the egg yolk and mix well.

Make the meatballs  (small in size), pass them by the flour, then thru the beaten egg with salt and fry in a pot. When golden on both sides, take out and drain with paper towel.

On a separate pan, put oil, tomato paste and chicken buillon cube, fry a little and add pepper, lemon juice and water to make little bit of sauce. Add the meatballs to the pot, lower the flame and cover for a minute. Turn the meatballs, cover the pot and turn off. Serve with white rice and tomatoes

Esta receta me la dio Sol, la mama de mi amiga Hannah P. Ella es cocinera de grandes ligas…asi que me emociono preparer esta receta. Especialmente porque ella tiene otro rango de especias a los que usualmente utilize…estas albondigas son simplemente delilciosas

1 libra de carne molida

1 ½ lb de puerros

1/8 cucharadita de pimienta

¼ cucharadita de nuez moscada

¼ cucharadita de allspice

1 ½ cubitos de caldo de pollo

1 yema de huevo, batida

1 huevo entero, batido

harina

aceite para freir

Para la salsa

¼  taza de aceite

½ latita de pasta de tomate

1 cubito de caldo de pollo

½ taza de agua

jugo de un limon

pimienta

Corta la parte blanca de los puerros, lavalos y cocinalos por 20 minutos. Cuelalos y dejalos enfriar. Exprimelos con las manospara sacarles ele exceso de agua. Ponlos en el procesador de alimentos y muelelos.

Mezcla los puerros con la carne molida, agrega las especias, el cubito molido, la yema de huevo y mezcla bien.

Haz las bolitas de carne (pequenas), pasalas por harina, el huevo batido con sal y frielas en una olla grande. Cuando estan dorados por ambos lados, sacalas y secalas con papel toalla.

En una sarten separada, pon aceite, pasta de tomate y el cubito triturado, revuelve bien, agrega la pimienta, el jug ode limon y agua y haz una salsita. Agrega las albondigas a la salsa y tapalas por un minute. Voltealas una vez y tapalas y apaga el fuego. Sirvelas con arroz blanco y tomate.
