I had this huge craving for seaweed salad for more than 2 weeks, so when I went to the Chinese market and saw the dried wakame (seaweed), I just had to get it…2 packages of it.

Little did I know, that a little of dried wakame goes a long way. I soaked a whole 2 ounce pack in water, and this can feed like 6 persons, so i recommend to use 1/4 of the pack for this recipe ( I googled some recipes and this one fit the ingredients I had at home, and it surely did not disappoint, it was exactly what I was craving for πŸ™‚

1/4 pack of wakame seaweed

water for soaking

3 tablespoons of rice vinegar

3 tablespoons of soy sauce

1 tablespoon of sesame oil

1 teaspoon of brown coconut palm sugar

1 teaspoon of dried ginger

1/2 tablespoon of finely chopped garlic

2 green onions, thinly sliced

1/4 cup of finely shredded carrot

2 tablespoons of chopped cilantro

1 tablespoon of toasted sesame seeds (just toast them like for 20 seconds in a pan)

Soak the seaweed in water for about 5 minutes (enough to cover it), then drain very well the excess water. Chop the seaweed finely and put in a bowl. Add the carrots, scallions and cilantro.

Stir the soy sauce, vinegar, sesame oil, sugar, ginger and garlic in a separate bowl. Add this dressing to the salad and mIx well. Add the toasted sesame seeds on top.Β γƒœγƒŠγƒšγƒ†γ‚£
