Arugula Pesto

Want to safe another bunch of arugula before it goes bad? Pesto is the answer. Here’s what I used

2 cups arugula

1 cup extra-virgin olive oil

1/2 cup grated parmesan

1/3 cup toasted almonds

1 tbsp. lemon zest

2 cloves garlic

Salt and freshly ground black pepper, to taste

Process arugula, oil, parmesan, almonds, zest, and garlic in a food processor until finely chopped; season with salt and pepper. This is great in pasta, fish, sandwiches…the sky’s the limit.

 

Pesto de Arugula

Quieres salvar un mazo de arugula antes que se te dañe? Pesto es la respuesta. Esto es lo que use para hacerlo:

2 tazas de arugula

1 taza de aceite de olivo extra virgen

1/2 taza de parmesano rayado

1/3 taza de almendras tostadas

1 cucharada de ralladura de limón

2 dientes de ajo

Sal y pimienta al gusto

Pon en el procesador la arugula, aceite, parmesano, almendras, ralladura y el ajo hasta que estén finamente procesados; sazona con sal y pimienta. Es súper rico con pasta, pescados, sándwiches…el cielo es el limite.
